Grapes: 100% Asprinio. Production area: Agro Aversano. Type of soil: Predominantly sandy, with good surface permeability, of almost exclusively volcanic origin. Altitude: 80m a.s.l. Method of cultivation: Sylvoz on a bare foot. Harvest: Manual harvesting in crates. Grape yeld / ha: 60-70 quintals / ha. Harvest period: Last ten days of September / first ten days of October. Vinification: Fermentation at controlled temperature for 15 days. Refinement: 12 months on noble lees and repeated bâtonnage, to better refine and structure the final product. The wine is then aged in bottle for at least 3 months.
