Alla riscoperta dei patrimoni in via di estinzione di Giappone e Italia: Drengot e l’alberata aversana protagoniste durante il seminario tenuto con il sushi master Daisuke Okada
Durante la borsa vini in Giappone, Drengot ha fatto tappa anche al Goethe Institut di Akasaka dove lo scorso 18 ottobre, in collaborazione con l’Associazione Italo-Giapponese con sede a Tokyo, Drengot ha tenuto un seminario finalizzato alla riscoperta delle tradizioni culinarie in via di estinzione e degli abbinamenti con l’Asprinio di Aversa.
Il seminario ha visto la partecipazione, oltre che del delegato per i rapporti con l’estero di Drengot, anche di Fusako Sakurai, Amministratrice dell’Associazione Italo-Giapponese, e Daisuke Okada, il sushi master più importante e conosciuto del Giappone.
Filo conduttore dell’incontro, le tradizioni culinarie e produttive che, negli anni, stanno scomparendo.
Patrimoni in via di estinzione
L’evento si è aperto con la testimonianza di Drengot e del suo impegno nella tutela dell’alberata aversana, metodo di coltivazione della vite che affonda le sue radici in epoca etrusca e che, oggi, è in via di estinzione.
L’azienda ha presentato una panoramica storica, territoriale, e di gusto, delle peculiarità di questo metodo di coltivazione, in grado di dar vita a un eccezionale vino di Asprinio.
Daisuke Okada ha illustrato invece l’importanza di mantenere viva la tradizione del sushi, profondamente varia e interessante. Ogni città, infatti, ha la sua tradizione culinaria che, oggi, così come per l’allevamento ad alberata aversana, rischia di scomparire.
Il sushi master ha illustrato quindi il suo lavoro di ripresa e innovazione delle tipologie di sushi locali, per attrarre i giovani e dar vita a un processo di rinascita di un patrimonio culturale e culinario di enorme valore.
Al termine del seminario, è seguita una degustazione che ha visto le meravigliose composizioni di sushi del maestro Daisuke Okada, accompagnate dai nostri vini e spumanti. Un abbinamento gastronomico molto apprezzato dagli ospiti che hanno presenziato all’evento.
